A pure juice of still green olives of the typical Moraiolo, collected in the sunny and stony hills of Assisi between the end of September and the beginning of October. The olives are immediately processed to their maximum freshness and integrity with a soft pressing at controlled temperature, so that all the peculiar organoleptic characteristics of this excellent product remain intact.
